Center of Excellence Faculty and Staff Present Research at National School Nutrition Conference

The Center of Excellence for Food Safety Research in Child Nutrition Programs faculty and staff contributed at the School Nutrition Association’s Annual National Conference this month in Atlanta, GA.

Kevin Sauer, Associate Professor in the Department of Food, Nutrition, Dietetics, and Health, presented “Food Allergy Management: Training Innovations” and debuted the new Caitlin Remembered video developed by the Center in partnership with the Institute of Child Nutrition and the USDA Food and Nutrition Service Office of Food Safety.

Sauer and Kevin Roberts, Associate Professor and Interim Department Head of Hospitality Management, co-presented “Advancing Food Safety” and introduced food safety research tools to help child nutrition directors and managers assess and develop a comprehensive food safety plan for their programs.  .

Two research posters were also presented, “A Simulation Study to Evaluate the Safety of Lunches Stored in Coolers in Extreme School Bus Temperatures” and “Delivery and Holding Methods of Milk Served Outside of the Cafeteria: Current School Breakfast Program Practices.”

The Center hosted a networking event for 246 past graduates of Serving up Science: The Path to Safe Food in Schools program.  Serving up Science is a weeklong educational workshop developed for school nutrition professionals to delve into the science behind food safety in the food chain.

Also attending from the College of Human Ecology were Paola Paez, Research Associate Professor at the Center; Kerri Cole, Project Coordinator at the Center; and Michelle Alcorn, Graduate Research Assistant at the Center.  Center team members who were unable to attend the conference, but contributed greatly to the research and preparation for the conference are Carol Shanklin, Professor and Dean of the Graduate School and Tracee Watkins, Graduate Research Assistant.
