Haub pulls in grant to study grain, diabetes

Mark Haub, director of the human metabolism lab in human nutrition, and Yongcheng Shi from grain science received a USDA grant to train two doctoral students to understand how grains affect human health. The grant will fund two assistants over three years.

The goal, Haub explained, is to produce scientists and industry professionals who will appreciate and understand how different grains and grain processing affects the health of consumers.

Initial focus will be on diabetes-related factors. The two scientists hope to identify ways grains can help to better regulate blood glucose to prevent and/or help control Type 2 diabetes.
