L.A. Chef Taji Marie to present culinary workshop at K-State

MANHATTAN -- Red Mole Chicken Enchiladas. Grilled Jerk Spiced Pork Tenderloin. Tropical Fruit Salsa. Argentina-Style Ham and Cheese Empanadas.
Chef Taji Marie, Los Angeles, will demonstrate these and other dishes during a culinary workshop Thursday, March 6, at Kansas State University.
"Flavors of Latin America," the fourth annual department of hotel, restaurant, institutional management and dietetics' Culinary Enhancement Workshop for food service professionals and alumni, begins at 10 a.m. in the Derby Gold Room, Derby Dining Center.
The workshop will include flavors from the islands, Mexico, Brazil, Argentina and Chile. Participants, limited to 45, will learn production techniques, watch recipe demonstrations, dine on a Latin American lunch and participate in a hands-on session.
Ninety percent of the $100 registration fee is tax deductible and will help students attend a repeat workshop Friday, March 7, at minimum cost. Registration deadline is Saturday, Feb. 16.
Former culinary manager for Sur La Table in Los Angeles, Taji has worked with such food personalities as Rachael Ray and culinary school legend Anne Willan. Her articles and recipes have been published in Cooking Light and other magazines.
A corporate chef, she also teaches culinary classes and caters.
The workshop also can provide working professionals with continuing education credits for Kansas dietitian licensure.

The workshop is sponsored by K-State housing and dining services. The student workshop March 7 costs $10 for the general morning session and $5 for the afternoon hands-on session. The registration deadline is Feb. 16.
