The only program of its kind in the state of Kansas, the Department of Human Nutrition discovers, disseminates and applies knowledge to promote improved food choices, nutritional status, and well-being of people. The vision of the Department is to enhance the well-being of people by promoting informed food choices and optimal nutrition.
The Department provides comprehensive education, research and extension programs in human nutrition and sensory analysis. This is done through a focus on:
- Nutrition and physical fitness
- Bionutrition and functional foods, with an emphasis on basic and applied approaches to molecular biology, consumer behavior and sensory analysis
- Public health nutrition and nutrition education
Undergraduate degree programs include:
- Nutritional Sciences
- Nutrition and Kinesiology
- Public Health Nutrition
- Athletic Training
- Concurrent B.S. and M.S. in Human Nutrition (Adobe Acrobat)

Graduate degree programs are available in several areas of emphasis including:
- Sensory Analysis and Consumer Behavior specialization
- Nutritional Sciences specialization
- Public Health Nutrition specialization
- Public Health Physical Activity specialization
The department also offers an assortment of distance education courses.
Research is conducted to improve food quality and promote optimal health through understanding of nutrient metabolism and dietary behavior.
Extension Human Nutrition programs address critical issues such as:
- Nutrition for limited resource audiences
- Nutrition and health throughout the life span
- The role of nutrition in chronic disease prevention
