The Department of Hospitality Management and Dietetics (HMD) offers graduate programs which lead to a master of science or a doctor of philosophy. The department is one of the oldest in the College of Human Ecology. The first M.S. degree was granted from the department in 1921; the Ph.D. program began in 1975. Students are allowed to focus their program of study on foodservice or hospitality management.

Program Mission and Philosophy
The mission of the Graduate Program is to provide the theoretical and research base to prepare graduates for managerial, educational or research positions in foodservice and hospitality management. Graduate faculty and students collaborate to conduct applied research and disseminate findings through scholarly publications and presentations. Flexibility in planning the program of study allows students to meet personal and professional objectives while enhancing departmental research. Supportive faculty and peer relationships foster an environment where students can gain the knowledge, skills and confidence for leadership positions in their chosen field.
The Foodservice and Hospitality Management Specialization encompasses all aspects of foodservice and hospitality management. Graduates of our program will demonstrate:
- Efficient management of human, material, technological and financial resources
- Ability to recognize emerging trends and implement strategies to accommodate change
- Analytical decision making skills
- Leadership and administration in dietetics, and foodservice and hospitality operations
- Commitment to ethical business practices and assumption of the responsibilities for self-direction, self-evaluation and lifelong learning
- Research skills, including proposal preparation
- Leadership in design and implementation of theoretical or applied research
- Skills in publication and application of research findings
- Appreciation of the importance of the internal and external environments and their impact on educational and operational effectiveness
- Skills in effective communication, presentation and instruction
The program provides a variety of research opportunities in foodservice, tourism, gaming, lodging and dietetics education.
